This Neil Perry dish the Spicy Prawn Mango and Macadamia Salad is a great Christmas lunch alternative if you want to go light and fresh. Its not hard just a lot of chopping, buy the best ingredients you can find and it will sing …… It is delicious and you still get to go to the Fish Market at 3am Christmas Eve.
If you like you could use roast chook or duck instead of the prawns.
Ingredients – Serves 4
1kg large cooked tiger prawns
Or free-range chicken ( remove bones – skin optional and slice meat )
2 firm mangoes, peeled and cut into bite size chunks.
2 lebanese cucumbers, halved lengthways and sliced on the diagonal
10 cherrie tomatoes, quartered or halved
4 french shallots halved and thinly sliced
1 radicchio, sliced( or red witlof if you can get it)
1 handful of coriander leaves
1 small handful mint leaves
2green (spring) onions, sliced on the diagonal
100 ( 2/3) macadamia nuts roasted until lightly golden and sliced or roughly chopped.
Chilli Line Dressing
1 garlic clove, minced
1tps mild chilli flakes
1tbsp caster sugar
juice of 2 limes
100 ml extra virgin olive oil
sea salt and freshly ground black pepper
Prepare the dressing first
Combine all the ingredients in a bowl and season with salt and pepper. It should be sharp and hot with a nutty balance from the olive oil
For the Salad, put all the ingredients except the nuts, in a bowl, add the dressing and mix well. Divide the salad among 4 large plates, Then sprinkle with macadamia nuts, give a good grind of fresh pepper and drizzle over any remaining dressing from the mixing bowl.

This has been an absolute favourite of mine for years now. And of every single person who has had it with us.
There is a great cousin – with salmon – based on pretty well the same ingredients.
