This is a sweet twist on a caprese salad, the Heirloom tomato, Watermelon, Peach and Feta Salad is light making it perfect for a Sydney summer.
You will need
! ripe peach, pitted ad sliced into wedges
1 ripe heirloom tomato, de-stemmed and sliced into wedges
1 smal- medium watermelon, reme rind and slice into wedges
125 gm Feta cheese, sliced into triangles
Mint
Basil
Balsamic Vinegar
Olive Oil
Sumac
Maldon Salt
Black Pepper.
Method:
Pit Peach and slice into even sized wedges. Repeat with tomato and watermelon so the sizes and shapes are similar. Cut a block of feta into slices the same width as your fruit, and then cut in a diagonal into a triangle.
Layer tomatoes, watermelon, peaches and feta on a plate. Tuck mint and basil leaves in between the layers. Drizzle with olive oil, balsamic vinegar, and sprinkle with sumac, salt and black pepper.
