Gwyneth Paltrow’s Bummer Bars


This recipe is from Gwyneth Paltrow’s new cookbook “Its all Good”. I’m pretty sure you won’t turn into a thin blond woman wandering a paddock with a blanket around her shoulders sucking on a bit of straw if you make these, however they are a great if you are in a hurry and need breakfast on the run.

They also give that grain in search of a personality, Quinoa, something to do. I know it’s a Super bloody food, but by god it’s dull. OK protein Packed and Vegan, thank you Gwyn.


1 ½ cups of Quinoa flakes

¼ cup ground flaxseeds

A pinch of salt

¼ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ cup extra virgin olive oil

¼ cup maple syrup

2 tablespoons brown rice syrup

½ chopped dried fruit apricots/prunes

½ chopped nuts pecans/walnuts


Preheat the oven 180c. Line a brownie pan with parchment or baking paper. Combine all the ingredients in a large bowl and pour the mixture into the brownie pan. Pack the mixture down with a rubber spatula. Bake for ½ hour, or until the bars have firmed up and are golden brown. Let cool before removing from the pan. Use the parchment to lift the bar out of the pan and cut into rectangles. Store in an airtight container.
