A broccoli soup served in a Mud bowl

OK this is a Paleo soup, but it’s a lovely way to get your greens. It’s from the book “Clean Living” by Luke Hines and Scott Gooding. The lovely green bowl is by Mud …… keep your eyes open for a blog about Mud.

 Serves 4-6

2 tablespoons coconut oil

1 brown onion, chopped

2 garlic cloves, minced

4 fennel bulbs, trimmed, cored and thinly sliced

3 medium heads of broccoli

4 cups chicken stock

1 x 400 can of coconut milk

sea salt, ground pepper

juice and finely grated zest of ½ lemon

  • Start by melting the coconut oil in a large saucepan over a high heat, then sauté the onion garlic and fennel until they’re soft – it should take about 5 minutes or so. We love sautéing fennel, as the aromas are just wonderful.
  • It’s now time to add the broccoli, chicken stock and coconut milk. Give everything a stir as you bring it to the boil , then reduce the heat and simmer, partially covered, for about 12-15 minutes, until the broccoli has softened . Season with salt, pepper, lemon juice and zest.
  • Using a stick blender, blitz all the ingredients really well until you are left with a rich green puree.
