5-Spice Peach and Raspberry salad

At the end of the season but these fruits are still in abundance ... a great time to try this salad. Try Harris Farm's not-perfect's selection so it won't break the bank!

This is from Ottolenghi's Simple

" You don't want this salad to be too sweet, so far the best results start with peaches that are not too ripe. This looks so perfectly summery and also works really well at a barbecue, where there fruit couple,emts and cuts through all sorts of meat. Some slow-cooked port belly alongside is a particularly winning combination.

Serves Four as a side

11/2 tbsp cider vinegar

1 tsp maple syrup

1/4 tsp Chinese 5-spice

1tsp olive oil

1 shallot, thinly sliced ( 20g )

100 raspberries

3 firm peaches, halved, stone removed cut into 1/2 cm wedges ( 290 g )

40 g watercress

1/2 small radicchio, cut int 2cm wide slices ( 50 g )

salt

In a large bowl, mix together the first five ingredients with 1/3 teaspoon of salt. add the raspberries, lightly crushing them with the back of a fork, then add the remaining ingredients.

Mix together well and serve.
