As promised yesterday the recipe for Sri Lankan Cashews with Chilli salt. Warning …. they are hard to stop eating. We have stayed at the fabulous Wallawwa Boutique Hotel in Sri Lanka several times, it has been how we start and end a stay in this fabulous little country.
The first time we stayed the Chef introduced us to these fabulous nuts to go the the Gin and Tonic, one has to get into the spirit when staying at such a Colonial throw back.
The second time we stayed he let me stand at his shoulder in the kitchen while he made them ..
You will need
Several bulbs of garlic sliced thinly
Raw Cashew nuts
Chilli salt ( I made my own added chilli powder and salt into a shaker) Make a bit once you try these you’ll be hooked.
Now all you have to do is fry all of the ingredients – independently –
As soon as the cashews come out of the oil add the chilli salt.
Combine – Try not to eat them all at once.
